Granny Smith, also known as green apple or sour apple, is an apple variety that originated in Australia in 1868. It is named after Maria Ann Smith, who grew this variety from a random seedling. The tree is thought to be a hybrid of the European wild apple tree Malus sylvestris and the domesticated apple tree Malus domestica as a pollinator.
Fruits are hard, firm and with light green skin and crisp, juicy flesh. The taste is sour and acidic. It stays firm when cooked, making it a popular culinary apple used in pies that can be sweetened. Apples go from being fully green to yellow when overripe. In 2019, the American Apple Association reported that Granny Smith was the third most popular apple in the United States.
